Made the slow way, in a copper pan over the lowest heat, with unwaxed lemons, whole eggs and cold butter whisked in cube by cube. The result is properly sharp — a curd that sets silky, zesty and bright rather than sweet and loose. Perfect for spreading on toast, layering through a simple sponge, or stirred through yogurt.
