A Sienese classic we have loved for years. Ground almonds and sugar are folded with barely whisked egg white, orange zest and vanilla, then rested overnight before baking so the tops crackle gently. The inside stays dense, chewy and perfumed — closer to a small marzipan cloud than a biscuit, and naturally gluten-free. Best with strong coffee and good intentions.
